
JAPAN CRAFT SAKE COMPANY (CEO: Hidetoshi Nakata) supervised the development of a new product, “Fucco”, which carries forward the tradition of Noto’s signature confection, “Daizu Ame.”
This initiative was part of a regional collaboration project by Hougakuen High School in Nanao City, Ishikawa Prefecture.
In 2024, the Noto Peninsula suffered extensive damage due to earthquakes and heavy rain.
We hope this year to be remembered not just as a year of disaster, but as a year of recovery.

"Daizu Ame,” once regarded as a signature confectionery of Noto, is now on the verge of disappearing.To preserve this tradition for future generations, the students challenged themselves to recreate it in a new form.“Fucco” was born as a confectionery that blends tradition and innovation, aiming to become a symbol of recovery from the disasters.
In this project, the students actively participated in every aspect of product development, including material selection, prototyping, naming, design, and sales strategy. They created a product infused with the region's values and a message for the future. Our company supported this process by supervising aspects such as flavor, packaging, product design, and brand story development, ensuring that the product conveys the local culture and the students’ aspirations.

The completed product, “Fucco,” is a modern take on Nanao’s traditional confection, “Daizu Ame,” reimagined as bite-sized treats.Made with nuts and locally sourced roasted soybean flour (kinako), the delicately soft dough envelops caramelized nuts and is coated with chocolate. Noto-grown salt and soy sauce add depth to the flavor.
This nostalgic yet innovative version of "Daizu Ame" aims to be a timeless treat.The harmonious blend of tradition and innovation creates a flavor that appeals to all generations, making it a perfect gift option.
It is currently available for purchase at MIHON ICHI on the first floor of Kanazawa Forus, as well as through our online store. A portion of the proceeds will be donated to the city of Nanao as a contribution toward reconstruction efforts.
