Japanese Sake Brand “éks” Announces New Product Lineup: “éks KAISEKI” and “éks SUSHI” ~ Commemorating the New Lineup with Limited Sales on MAKUAKE ~

A new sake brand, "éks", designed to pair perfectly with a variety of cuisines, has announced its latest product lineup: "éks KAISEKI" and "éks SUSHI".

The "éks" series is typically produced and distributed in limited quantities, exclusively available to restaurants through Sakenomy Pro. However, to celebrate the release of these new products, a limited public release has been made available on MAKUAKE.

◾️ About the New Lineup: "KAISEKI"
"KAISEKI" represents a bold new endeavor for the "éks" brand.
This exceptional sake was developed through a collaboration between:

Koji Koizumi, the chef of ""Kohaku"", a renowned Japanese restaurant in Tokyo's Kagurazaka, which has held three Michelin stars for nine consecutive years.
Kokuryu Sake Brewing, one of Japan's most prestigious breweries, beloved by fans both domestically and internationally, located in Eiheiji Town, Fukui Prefecture.

This partnership has resulted in a sake that embodies the pinnacle of Japanese culinary and brewing excellence.

Following éks YAKINIKU and éks TEMPURA, the much-anticipated éks SUSHI is finally here! This masterpiece is the result of a collaboration between Yasuhiko Mitani, the chef of Yotsuya's ""Mitani,"" a sushi restaurant so exclusive that reservations are said to take four years, and Shimizu Seizaburo Shoten (Suzuka City, Mie), one of Japan's top sake breweries with numerous accolades in domestic and international awards.
Renowned as a pioneer of pairing sake with sushi, Mitani has overseen the creation of this highly anticipated bottle.

◾️ Lineup Introduction & Future Development

The "éks" brand now features four varieties:

  • YAKINIKU

  • The newly added KAISEKI and SUSHI.

Moving forward, the brand will continue to focus on culinary genres that pair exceptionally well with sake. Plans include collaborating with various renowned chefs and breweries to expand the series further.


【éks TEMPURA】
The first release in the "éks" series is a collaboration between Nihonbashi Sonoji (Tokyo, Nihonbashi), a Michelin one-star restaurant known for its concept of "Enjoy tempura, finish with soba," and Hatsukame Brewery, the oldest sake brewery in Shizuoka.
◆Concept
Designed as a sake that "complements tempura," it pairs beautifully with light ingredients such as shrimp, whiting, and squid, as well as the refreshing aroma and delicate sweetness of seasonal ingredients like spring mountain vegetables and summer produce. With a floral fragrance, gentle bitterness, and smooth finish, it offers a fatigue-free drinking experience.
