THE INNOVATORS is a series of exclusive dinner collaborations, which aims to elevate both sake and cuisine in Japan to the “The Next Level” and beyond.

With this aim in mind, JAPAN CRAFT SAKE COMPANY has set a challenge to Japan’s most celebrated chefs & master brewers: to create dynamic sake & food pairings that showcase sake’s compatibility with a diverse range of culinary styles.

These unique fine-dining experiences also challenge guests to re-think their perceptions of sake and see it in a new light: an artisan beverage of the same calibre and quality as the finest wines, with a rightful place in the Michelin-starred dining rooms of the world.

JAPAN CRAFT SAKE COMPANY celebrated the last INNOVATORS event of 2016 with the superbly crafted sake of Fukushima’s Sharaku, paired with a specially designed contemporary kaiseki course by Mr. Koji Koizumi - chef of three Michelin starred Kohaku, and complemented by tableware of renowned pewter maker NOUSAKU.

These three modern day alchemists combine the best of traditional techniques, with their own exceptional skill and innovative vision, to transform simple natural resources into precious treasures for a new generation.
